This red wine vinegar is made using the old-fashioned Casalinga method: vinified wine is placed in small oak barrels, and ‘the mother’, a rich viscous vinegar which has been created over many years, is added. The vinegar is a pinkish color, slightly tart, and has a 7% acidity degree.
Culinary Pairings: An elegant addition to any salad dressing or for the preserving of vegetables or fish.
