This artisan vinegar is made from organically grown Trebbiano and Lambrusco Grasparossa grapes in Modena, Italy. This is a dark brown, luminous vinegar with a flavorful bouquet and bittersweet taste. It spends its first two years aging in oak barrels before spending 8 years moving through several distinctive wood barrels which each lend a unique flavor to the vinegar.
Culinary Pairings: Delicious over shards of reggiano parmesan, salads, grilled game, or over vanilla ice cream, panna cotta, or fresh strawberries.
